The Were-Cow is one of the fearsome beasts that roam through the British countrysides according to The Observer's Book of Monsters, by Claude Savagely. The illustration suggests it's an extremely hostile creature and capable of decapitating a man.
While nothing has been explicitly revealed about its nature, the name Were-Cow suggests it is some kind of therianthrope, akin to a Werewolf or Were-Rabbit.
Interestingly, the prefix "Were" is traditionally masculine, whereas "Cow" denotes a female bovine. It's not known whether all Were-Cows are female or whether a male human afflicted with this condition would change gender during the transformation.

- The Observer's Book of Monsters is a fictional book created specifically for the Wallace & Gromit film, in which the character Reverend Clement Hedges owns a copy. Besides the Were-Cow, the volume also has entries on the Loch Ness Monster, Bigfoot and the Were-Rabbit.
- In a Halloween special of Phineas and Ferb, Dr. Doofenshmirtz transformed himself into a Were-Cow thanks to one of his inators that gives a cow a piece of his mind.
